Green Chile Cheeseburger French Fry Casserole

Ooo I’m feeling a little ashamed of myself here. I know I shouldn’t have, but I really enjoyed (inhaled) this super unhealthy amazing tasting spicy casserole. Why do such unhealthy foods have to taste so darn good?

It’s so simple too. I just don’t want to know the calorie count. If you find out, please don’t tell me!

1 ½ pounds extra lean ground beef
½ an onion, diced
¼ teaspoon onion powder
¼ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon fresh ground pepper
1 (7 ounce) can diced mild green chiles
1 (15 ounce) can Garacias Nacho Cheese Mexican Cheese Sauce, medium or mild (I used medium)
1 heaping cup shredded chipotle cheddar cheese, or cheddar cheese of your choice
1 pound Ore-Ida Extra Crispy Fast Food Fries
A sprinkle of salt for fries

1. Preheat the oven to 400 degrees. Get out a 9x13 inch Pyrex pan and a large skillet.

2. Cook the ground beef, onions, onion powder, garlic powder, salt, and fresh ground pepper together over medium high heat until no longer pink, Strain off the fat and place the meat mixture back in the pan.

3. Add the chiles and nacho cheese sauce to the pan and stir into the meat. Cook for about four minutes on medium low until combined and warmed through.

4. Pour the meat mixture into the 9x13 inch pan. Spread out and top with shredded cheddar. Top with frozen fries and sprinkle lightly with salt.

5. Bake for 30 minutes.

Of my Godness!I am so making this tonight. How do you know those are the only ingredients in my pantry? Good by diet!

You used extra lean ground beef... and I think if you close your eyes while you add the cheese & fries... none of those calories count!

Yay! The calories don't count. This meal was awesome, and I'm now even more pleased to find out that it isn't going to add to my waistline. Anyway, thanks for sharing and awesome pic by the way.

Mmmmm... you are an evil temptress! EVIL! If it weren't so sinful, I would call it heavenly.

Calories be damned!! This is an awesome cross between nachos and french fries.......what could be more sinfully delicious?

Coleens Recipes said...

Are the french fries still frozen when you add them to this dish?

Cheeseburger and french fries all rolled into one! The "perfect" comfort food:) Mmmmmmmmm!

Hi Coleen,

Yes just throw them on top completely frozen.

Hi Ladies and Scott!

Thanks for visiting today. Yeah, this one is pretty um, health challenged today lol.

This looks UNBELIEVABLY good. A full-fat meal sometimes is good for the body... or at least that's what I say ahahha.

Hey, at least you didn't fry the french fries! You totally saved some calories that way! ;)

This sounds amazing.

Naughty, naughty, naughty! I can see why this was so yum. I woud probably bulk it up with celery and bell peppers, maybe carrots too.

Wha?! Oh man, this creation looks delicious! Worth every calorie :)

You know, I really think you need to move into my house. It is the only way I can think of in solving my desire to have all of the food you make.

This just cinched the deal.

isn't this a rachael ray recipe? if not, it's ridiculously close.

The Cooking Photographer said...

No, it's my recipe. I didn't have any help making this crazy thing. When I use recipes from someone else I always site them.

The Cooking Photographer said...

For your comfort and mine, I Googled Rachel Ray and found what you’re talking about. You're right, there is an idea that is similar, but if you look the recipes are very different.

French fry casserole is nothing new. The only new idea would be what goes in it.

Where on earth do you buy Garcia's Nacho Cheese sauce? You'd think we'd have that here in Texas...

The Cooking Photographer said...

Hi Amelia,

I bought it in the Mexican section of a grocery store. You guys have to have it, you have everything in Texas lol!

Man, on man... 2 months of searching for that cheese sauce (or at least something similar) in at least 20 Austin grocery stores, and no dice! My craving for this dish just keeps getting worse and worse!

I finally found "Juanitas Mexican Gourmet Nacho Cheese Sauce" that I will try out this weekend... fingers crossed it turns out just as delicious as you would expect. :)

I hope you like this one. More than that I hope I don't let you down!

I love it. Your writing is great and you definitely have the culinary chops. It takes a great cook to take lowbrow ingredients and give them a touch of culinary magic, but without pretense or being patronizing. You succeeded in giving these humble ingredients some elegance and Wow-factor.

The Cooking Photographer said...

Jenn thank-you! That was a really nice comment.

HI Laura. This looks great and I plan to make it soon, But i am not sure what to serve it with. Any suggestions?

Dalia said...

Hi Laura, I cannot find this exact cheese sause in a can anywhere? Is there a substitution, like maybe the cheddar cheese sauce or the cheddar queso in a jar found in the mexican food section?

The Cooking Photographer said...

Hi Dalia,

Use the queso in a jar. It will be pretty close.
