I have an enormous (dough makers) pizza pan, so this was just enough dough for one pizza. I changed the method a bit: I mixed rapid-acting (instant) yeast in with the dry ingredients (minus 1/2 c flour), then stirred in the wet.  I kneaded in the remaining flour and once it was all incorporated, I covered it and let it rise for 1/2 hour.  I then put it directly in the pizza pan and stretched it to fit, then  piled on my toppings and baked for 10 minutes. It worked perfect! I live just across the road from a wonderful Italian restaurant which makes amazing pizza which tastes great and authentically italian - I suppose it helps that the chef is Italian too. You should get out more, go to more restaurants, explore.
